Italian Chicken with Penne

Servings: 5 @ 3 WW Freestyle points
Ingredients
  • 1.5 pound of chicken breast, cubed ½" (0 SP)
  • 2 cups penne (2 cups = 14 SP)
  • 1 12oz can fire roasted tomatoes + 1 can of water (or chicken stock)
  • 1 tablespoon basil
  • 1 teaspoon oregano
  • ¼ teaspoon garlic powder
  • 1 small onion, diced
  • 1 small can sliced black olives (drained) OPTIONAL (if using add 1 SP/2 T to total SP)
  • Optional (1 to 2 turkey sausage links add extra flavor)
  • salt and pepper to taste
Steps
  1. In your pressure cooker, add everything and give a good stir.
  2. Push the pasta down so it's submerged in the liquid.
  3. Close lid and set on manual for 5 minutes or ½ the time specified on the pasta box.
  4. When your timer goes off, allow for 1 minute of NPR (natural pressure release- do nothing for 1 minute) then quick release.
Notes
  • Original recipe Creamy Italian Chicken with Penne from pressureson website.
  • Made this 11 to 16-17 using up 1 lb turkey sausage. Really Good!
  • If adding water rather than broth, add 1.5 to 2 tsp Chicken Bouillon.
  • Add 1 link (4 SP) of sweet italian turkey sausage. 5 servings @ 4 FP each.
