Cream cheese chicken enchiladas
Ingredients
  • 2 cups cooked, shredded chicken (you can use rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded   Monterey Jack cheese
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup sour cream
  • 1 small can of diced green chilies (optional, for added heat)
  • ½ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 8 to 10 tortillas (corn or flour)
  • Fresh cilantro, chopped (for garnish)
  • Sliced green onions (for garnish)
