Black Bean Burgers with Tomato-Lime Mayo
Ingredients

  • ¾ cup panko breadcrumbs
  • 3 tablespoons freshly squeezed lemon juice
  • 1 teaspoon dried oregano
  • 1 to 2 tablespoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 3 to 4 large cloves garlic, minced
  • 2 eggs, beaten with a pinch of salt
  • 1 small red onion, finely chopped
  • 4 tablespoons extra-virgin olive oil
  • 6 sesame seed potato buns
  • Serving suggestions: bibb lettuce, tomato slices, bread and butter pickles and pickled jalapenos
