Ingredients
  • 1 tbsp olive oil , (or ¼ cup water for sauteing)
  • 1 medium onion , finely chopped
  • 3 cloves garlic , minced
  • 2 stalks celery , chopped
  • 2 green onions , chopped, white & green parts
  • 2 carrots , cut in circles
  • 2 sprigs fresh thyme , or 1 teaspoon dried
  • 1 tsp parsley flakes
  • 1 tsp dried basil
  • 1 lb green cabbage , roughly chopped
  • 2 quarts water , optionally with 2 bouillon cubes, or use vegetable broth
  • ½ tsp paprika
  • ¼ tsp Cayenne pepper , (optional)
  • 1 tbsp nutritional yeast flakes
  • 1 tsp sea salt , omit if using vegetable bouillon cubes
  • 1 bay leaf
