Potato Salad for 4

Ingredients
  • 1 lb Yukon Gold potatoes, cubed
  • 3 eggs
  • 1 ½ Tbs cider vinegar
  • ½ tsp celery salt
  • 2 stalks celery, diced
  • ⅓ to ½ cup lite mayonnaise
Steps
  1. Put potatoes on trivet in IP. Place eggs on top and add 1 cup water.
  2. Cook 4 minutes HP, QR.
  3. Put eggs in ice water to cool.
  4. Place potatoes in mixing bowl and sprinkle vinegar over them and mix.
  5. Peel and chop eggs, add to potatoes.
  6. Add the rest of the ingredients and mix well.
