Ingredients
  • ½ cup sugar
  • 1¾ cup cream
  • 1 cup milk
  • 7 Tbs sugar
  • 1 tsp vanilla
  • 2 egg yolks
  • 3 whole eggs
  • pinch salt
Steps
  1. ½ cup sugar - Melt in a saute pan over medium heat until dark amber (do not stir)
  2. portion into ramekins or baking dish
  3. milk and cream - heat in saucepan but do not boil
  4. eggs, yolks, sugar, vanilla and salt - mix together
  5. temper hot milk into egg mixture to raise temperature of eggs slowly.
  6. strain if needed as you pour into the caramel lined ramekins/baking dish
  7. place ramekins into baking dish and fill dish ½ full of boiling water
  8. place in oven and bake for 40 to 50 minutes
  9. Flan is finished when a small part of the center still jiggles a bit, but there is no browning.
Notes
  • I make this in the Instant Pot. 1 cup of water in the pot, place flan on the rack and cover with foil or lid.
  • ramekins: 9 minutes + natural release
  • baking dish: 15 minutes + natural release
