Ingredients
- ½ cup sugar
- 1¾ cup cream
- 1 cup milk
- 7 Tbs sugar
- 1 tsp vanilla
- 2 egg yolks
- 3 whole eggs
- pinch salt
Steps
- ½ cup sugar - Melt in a saute pan over medium heat until dark amber (do not stir)
- portion into ramekins or baking dish
- milk and cream - heat in saucepan but do not boil
- eggs, yolks, sugar, vanilla and salt - mix together
- temper hot milk into egg mixture to raise temperature of eggs slowly.
- strain if needed as you pour into the caramel lined ramekins/baking dish
- place ramekins into baking dish and fill dish ½ full of boiling water
- place in oven and bake for 40 to 50 minutes
- Flan is finished when a small part of the center still jiggles a bit, but there is no browning.
Notes
- I make this in the Instant Pot. 1 cup of water in the pot, place flan on the rack and cover with foil or lid.
- ramekins: 9 minutes + natural release
- baking dish: 15 minutes + natural release
