Dutch Brown Bean Soup (Bruine Bonen Soep)
Ingredients
  • 5 oz. (145 g) smoked bacon, cubed
  • 1 tbsp butter
  • 5 shallots, chopped
  • 1 large carrot, finely diced
  • 1 large leek, thinly sliced
  • 1 tbsp ground paprika
  • 3 lb. (1.3 kg) canned brown beans (or pinto beans), drained and rinsed
  • 12 oz.  (375 ml) tomato puree
  • 3 cups   (500 ml) beef stock
  • 2 bay leaves (fresh or dried)
  • Salt, pepper and ketjap manis or Worcester sauce, to taste
  • ½ cup chopped celery leaves
