Ingredients
  • 1 tablespoon bacon grease or coconut oil
  • 1 onion sliced
  • 1 ½ pounds ground beef
  • jalapeno pepper, seeded and chopped fine (or pepper of your choice)
  • 1 (6-ounce) can tomato paste
  •  
  • subheading: 2 to 4 T+ Low Carb Taco Seasoning OR:
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  •  
  • handful cilantro or culantro
  • 1 teaspoon celery salt
  • Salt
  • Freshly ground black pepper
Steps
  1. Heat bacon grease or coconut oil and saute onion until translucent.
  2. Add ground beef, jalapeno pepper, tomato paste, chili powder, cumin, cilantro or culantro, celery salt, and salt and pepper. Cook until browned.
  3. Drain off extra fat and divide into even amounts per the number of tamales you will be making.
  4. Continue on with Grandma Salazar’s Tamales
