Banana, Oat, and Chia Seed Muffins
Ingredients
  • 1 tablespoon ground flax seed
  • 2 teaspoons apple cider vinegar
  • ⅔ cup almond or soy milk
  • 2 cups spelt or whole wheat pastry flour
  • 1 cup rolled oats
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon dried ginger
  • 3 tablespoons chia seeds
  • 1 heaping cup mashed banana (3 large, very ripe bananas, mashed)
  • ¾ cup brown sugar
  • ⅓ cup vegetable oil (such as safflower, grapeseed, or canola)
