No-Bake Vegan Carrot Halwa Cheesecake (Grain-Free!)
Ingredients

  • 2 tablespoons maple syrup
  • 2 tablespoons sugar
  • 1 teaspoon ground cardamom

  • 1 tablespoon flax meal
  • 2 tablespoons raisins, soaked in warm water for at least 10 minutes and then drained

  • 1 cup ( 129 g) raw cashews soaked in hot water for at least 15 minutes
  • 15- ounce ( 425.24 ml) can of full fat coconut milk
  • ½ teaspoon vanilla extract
  • 4 drops of almond extract
  • 2 teaspoons lemon juice
  • ¼ cup ( 50 g) sugar
  • ¼ teaspoon salt
  • 1 tablespoon refined coconut oil optional
