  • 1 ¾ cups warm water (95°F to 110°F)
  • 5 cups all-purpose flour, plus more for rolling
  • 2 teaspoons kosher salt
  • 1 tablespoon vegetable oil
  • Cooking spray
  • ⅓ cup baking soda
  • 4 cups boiling water
  • ¼ cup Maldon or other flaky salt
  • ½ cup (1 stick) unsalted butter, melted

  • 6 ounces cream cheese, at room temperature

  • 2 ounces Gouda cheese, shredded (about ½ cup)
  • 2 teaspoons whole-grain mustard
  • ½ teaspoon smoked paprika
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
