Ingredients

  • 1 medium onion, chopped lengthwise

  • 3 to 4 large carrots- cut into chunks
  • 4 cloves garlic, minced
  • 2 cups low sodium vegetable stock
  • ½ teaspoon salt and pepper, or to taste
