Weight Watchers Stuffed Pepper Soup
Ingredients
  • ▢1 lb ground turkey extra lean ground turkey or beef
  • ▢2 cups broth low sodium, or water
  • ▢14.5 oz diced tomatoes
  • ▢15 oz tomato sauce
  • ▢3 cups bell peppers chopped (I’ve added up to four peppers, and it’s yummy!) I like green and red peppers
  • ▢1 cup onion chopped
  • ▢¼ tsp black pepper
  • ▢1 clove garlic
  • ▢2 tsp oregano
  • ▢½ cup brown rice dry and rinsed, short grain
