Mango Colada Fridge Cake
Ingredients
  • 250g mascarpone
  • ¼ cup (55g) caster sugar
  • 2 tablespoons lime juice
  • 1 ½ cups (375ml) thickened cream
  • ½ cup (125ml) passionfruit pulp, strained
  • ¼ cup (60ml) Malibu coconut rum (optional - see tip)
  • ¼ cup (60ml) pineapple juice
  • 12 savoiardi sponge finger biscuits
  • 1 mango, peeled, coarsely chopped
  • 120g fresh raspberries
  • 1 mango, extra, thinly sliced, to serve
  • Passionfruit pulp, extra, to serve
  • Mint leaves, to serve
