Coconut Curry with Broccoli and Snow Peas
Ingredients
  • 1 medium onion, chopped

  • 6 cups broccoli florets
  • 1 ½ cups diced tomatoes (see note)
  • 2 cups low sodium or no-salt-added vegetable broth
  • 1 tablespoon curry powder
  • ⅛ teaspoon ground cayenne pepper,or to taste
  • 1 ½ cups light coconut milk
  • 1 tablespoon lime juice
  • 6 ounces snow peas, trimmed
  • 4 cups cooked whole grain such as quinoa, wild rice or farro
