Ingredients
  • 200 g almond meal
  • 200 g icing sugar
  • 2 egg whites (beaten)
  • 1 egg white extra for brushing biscuits
  • ΒΌ teaspoon vanilla
  • 1 teaspoon icing sugar
  • Extra icing sugar for dusting biscuits
Steps
  1. 1) Seperate 2 egg white from the yolks
  2. 2) Beat lightly with a fork
  3. 3) in a separate bowl place almond meal and icing sugar
  4. 4) pour egg whites into almond meal and sugar mixture. Mix with a fork until all combined.
  5. 5) if you have a strong piping bag and a very large star nozzle, you can place the mixture into the bag and pipe out round cookie shapes. If not get about a teaspoon of mixture and roll it into a ball, press it down lightly on a lined cookie tray and place an almond or a candied cherry in the centre.
  6. 6) just before baking brush each biscuit with the remaining egg white combined with the vanilla and icing sugar. Bake in a 150 Degree oven for 15 minutes (non fan force)
  7. 7) remove from oven and let cool a few minutes before removing from tray.
