Enchilada Stuffed Mushrooms {Vegetarian}
Ingredients
  • 6 Portobello mushrooms
  • 1 tablespoon olive oil
  • 1 small yellow onion, chopped
  • 1 red bell pepper, stemmed, seeded, and chopped
  • 1 clove garlic, minced
  • 1 cup frozen corn
  • 15 oz black beans, rinsed and drained
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1 tablespoon lime juice
  • 3 tablespoons chopped cilantro
  • 1 cup red enchilada sauce
  • 1 cup shredded Monterey Jack or cheddar cheese, divided
  • Garnish: Cilantro, avocado or guacamole
