Instant Pot Chicken, Black Bean and Rice Burrito Bowls
Ingredients
  • 1 TBS olive oil
  • 1 small onion, diced
  • 1 clove garlic minced
  • 1 tsp chili powder
  • ½ tsp Kosher salt
  • 1 ½ pounds boneless, skinless chicken thighs or breast, cut into 1-inch pieces
  • 1 - 15.5 ounce can black beans, drained & rinsed
  • 1 cup long grain white rice uncooked
  • 1 cup salsa
  • 2 cups chicken broth
  • Optional - ¼ cup chopped cilantro for serving
  • Optional - ¼ cup grated Cheddar cheese for serving
