Ingredients
  • 2 large boneless chicken breasts
  • 1 can mandarin oranges in juice separated
  • 1 tablespoon minced garlic
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
  • 2 tablespoons soy sauce (if you find mushroom soy sauce, be sure and buy a bottle)
  • 1 small red pepper diced
  • 1 small yellow pepper diced
  • 1 small orange pepper diced
  • 1 small jar marmalade diced
  • 1 pound carrots sliced into rounds
  • 1 medium onion diced
  • 1 can bamboo shoots
  • 1 can sliced water chestnuts
  • 2 tablespoons cornstarch
  • 2 tablespoons water
Steps
  1. Add the first 12 ingredients, including the mandarine juice but not the oranges, and mix well. Place lid on pressure cooker and set timer 35 minutes and quick pressure release. Add the orange segments, bamboo shoots, and water chestnuts. Mix the cornstarch and water and stir into the pot and stir while it thickens. You might have to hit the saute button if your meal has cooled off.
  2. Serve over rice
