Port Cherry Sauce for Duck

Ingredients
  • 2 tbsp chilled butter
  • ¼ cup finely chopped shallot
  • ½ cup low-sodium chicken broth
  • 8 halved pitted sweet red cherries, fresh or frozen (thawed)
  • 2 tbsps Tawny Port
  • 1 tbsp orange blossom honey
Steps
  1. Melt 1 tbsp Butter
  2. Add shallots and cook for 30 seconds
  3. Add broth, cherries, Port and Honey
  4. Increase heat to high and boil until sauce is reduced to glaze, stirring often (about 3 minutes)
  5. Wisk in 1 tbsp butter
  6. Season with salt and pepper to taste
