Cranberry sauce by Rich Lum
With Apple, orange and strawberries cooked in a 6 qt IP
Ingredients
  • 1 bag of cranberries
  • 1 lemon..zest and juice
  • 1 orange..zest and segments
  • 1 Apple , peeled, cored and chopped
  • 8 to 10 strawberries, hulled and cut in half
  • ¼ cup real orange juice
  • ½ cup sugar
  • 1 cinnamon stick
Steps
  1. Rinse the cranberries in a large bowl of water..discard any berries that don't float
  2. Add everthing to the pot
  3. Close and seal your pot
  4. Set the pot to manual 3 minutes and allow for a full NPR
  5. Remove the cinnamon stick and stir with a wooden spoon
  6. Divide the finished product into two bowls. Allow to cool before covering and placing in the fridge
Notes
  • You can use a cup of sugar if you like it sweeter. You can also stir in raisins that have been soaked in hot water..( or Rum )
