Mom's Homemade Italian Sausage Skewers

Ingredients
- 2 pounds of ground pork (I usually use a pork butt ground)
- 1 tablespoon fennel seed
- 2 tablespoons paprika
- 2 teaspoons minced garlic
- 1 tablespoon olive oil
- 1 teaspoon or more of salt and pepper
- 2 tablespoons white wine
- 3 tablespoons grated cheese
- 1 tablespoon dried parsley
- For hot sausage add ½ teaspoon of ground cayenne pepper per pound leave out if you want sweet sausage.
- For herb-flavored sausage add 1 tablespoon of dried Italian seasoning or 1 tablespoon chopped fresh basil and 1 tablespoon chopped fresh Italian parsley
