Stuffed Peppers (Vegan)
The best thing about this recipe is that you can add as many vegetables as you please! Onions and mushrooms are great options. If you're not in the mood for vegan, add shredded cheese and grate it!
Ingredients
  • 4 Bell Peppers, Red, Green, Yellow, or Orange
  • 2 Cups Cherry Tomatoes (1 Pint)
  • 1 Medium White Onion
  • 1 Cup Fresh Basil Leaves
  • 3 Cloves Garlic
  • 2 Teaspoons Olive Oil
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
