Instant Pot Moist Sliceable Chicken Breast by Rich Lum
Cooked in a 6qt IP

Ingredients
  • 1. Cooking for two PIP
  •  
  • 2 BL/SL chicken breasts fresh or frozen
  • 2 Cups of soy sauce
  • 1 Cup of water
  • 1 Cup of Sake.....you can sub mirin or Dry Sherry
  • 1 ½ Cups of sugar.....I left the sugar out
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon Louisiana hot sauce
  • 2" piece fresh ginger, peeled, sliced into thin rounds then julienned
  • 2 cloves garlic, pressed
  •  
  • Cornstarch slurry
  •  
  • 2. Cooking for the Family directly in the pot
  •  
  • 4 pounds BL/SL chicken thighs
  • 2 cups of soy sauce
  • 1 ½ cups of water
  • 1 cup Sake.... You can sub Mirin of Dry Sherry
  • 1 ½ cups white sugar
  • 2 Tablespoons Worcestershire sauce
  • 2 teaspoons Louisiana Hot sauce
  • ½ teaspoon chilli pepper flakes
  • 2" piece of ginger sliced into thin rounds then julienned
  • 2 cloves of garlic minced
  •  
  • Cornstarch Slurry
Steps
  1. 1. Cooking for two PIP
  2. Mix all ingredients except the chicken in a bowl. Reserve 1 cup of the marinade and set aside
  3. Place one breast in each of the two 7.75" loaf pans
  4. Pour half of the marinade over each breast
  5. Add 1 cup of water and the trivet to your pot. Stack your loaf pans in a " plus" (+) pattern.
  6. Close and seal the lid.
  7. Set your pot to manual or poultry.... This is the method I came up with to cook breasts
  8. Allow for a 10 minute NPR
  9. Pour the 1 cup of reserved marinade into a small sauce pan over medium high heat. When the marinade begins to boil add in the cornstarch slurry a little at a time until the desired consistency has been reached
  10. Serve over rice or veggies
  11. 2. Cooking for the Family directly in the pot
  12. Combine and mix all the ingredients except the chicken in your IP.
  13. Add the chicken thighs to the pot
  14. Close and seal your lid
  15. Set your pot to manual or poultry 15 minutes and allow for a 10 minute NPR
  16. Open the pot and press cancel then sauté. When the liquid begins to bubble add the cornstarch slurry a little at a time until it the desired consistency
  17. Serve over rice or veggies
Notes
  • It's really really good with the sugar added but it's really good without it. I try to reduce sugar in recipes when I can and I do like this one without the sugar
  • Serve over rice....I've been trying to get the cooking time perfect on Hapa Haole rice...I'm getting close.
  • I also like serving it over mixed veggies
  • You can increase the amount of chicken thighs without changing the recipe
