  • 1/2 cup lemon juice about 4 lemons
  • 4 eggs
  • 1 cup fresh blueberries
  • 1/4 cup melted coconut oil or unsweetened applesauce
  • zest of 1 lemon
  • 1 tsp baking soda
  • 1/2 tsp salt
