Non-dairy creamy greens and pasta

Ingredients
  • 2c soy milk
  • 5oz cooking greens (spinach, chard, kale, etc.)
  • 1 to 2 cloves minced garlic
  • ½c ground almonds, walnuts, or pecans
  • Salt/Pepper to taste
  • Serve over pasta, rice, zoodles, etc.
Steps
  1. Bbring 2 c soy milk to a boil.
  2. Add remaining ingredients and cook until greens are soft.
  3. Blend until smooth with an immersion blender.
  4. Serve over starch of choice.
