Non-dairy creamy greens and pasta
- 2c soy milk
- 5oz cooking greens (spinach, chard, kale, etc.)
- 1-2 cloves minced garlic
- 1/2c ground almonds, walnuts, or pecans
- Salt/Pepper to taste
- Serve over pasta, rice, zoodles, etc.
- Bbring 2 c soy milk to a boil.
- Add remaining ingredients and cook until greens are soft.
- Blend until smooth with an immersion blender.
- Serve over starch of choice.
