Classic Shrimp Etouffee

Ingredients
  • 7 tablespoons unsalted butter*
  • 1 large onion ( chopped)
  • 1 ½ cup celery (chopped)
  • 1 cup bell pepper, green or a combination of green and red (chopped)
  • 3 cloves garlic (minced)
  • 6 tablespoons flour
  • 8 ounces clam juice or shrimp stock
  • 1 can (14.5 ounces) tomatoes (diced)
  • 1 bay leaf
  • 1 to 2 tablespoons Creole seasoning (preferably salt-free)
  • ¼ teaspoon ground black pepper
  • Dash of salt, to taste
  • 1 ½ to 2 pounds fresh shrimp (peeled and deveined)
  • 2 cups of hot boiled rice, for serving
