Noodles with Tofu and Broccoli
Ingredients
  • 8 oz. vermicelli or thin spaghetti, broken in half
  • ¼ cup tamari or low-sodium soy sauce
  • 2 Tbs. rice vinegar
  • 1 tsp. granulated sugar
  • 1 tsp. dark sesame oil
  • ½ tsp. crushed red pepper
  • 1 Tbs. vegetable oil
  • 2 cups red bell pepper strips, ¼-inch thick
  • 4 cups small broccoli florets
  • ½ lb. firm tofu, well-drained and cut into ½-inch cubes
  • 3 cloves garlic, minced
  • ½ cup thinly sliced scallions for garnish
