  • 1 can chickpeas (tinned) drained
  • 1 cup baby spinach chopped
  • 1 bunch asparagus chopped
  • 2 spring onion(s) finely chopped
  • ½ cup mint (fresh) chopped
  • 120 Dodoni feta cheese crumbled
  • 2 tbsp almonds (slivered) toasted

  • ¼ cup olive oil (extra virgin)
  • ¼ cup lemon juice
  • 2 tsp mustard (dijon)
  • ½ tsp sea salt
  • 1 tsp black pepper (ground)
