Blue Cheese and Salmon Quiche
Ingredients

  • 315g | 2 ½ cups plain flour
  •  
  • 1 tbsp sugar
  • 1 tsp salt
  • 185g | 1 ½ sticks cold unsalted butter, cubed
  • 50g | ¼ cup cold vegetable shortening, cubed
  • 1 tablespoon white vinegar
  • 60ml | ¼  cup ice-cold water (or less, as needed)
  • subheading: Filling:
  • 2 salmon fillets (about 200g | 7oz)
  • 100g | 3.5oz smoked salmon
  • 150g | 5.3oz blue cheese, crumbled or cut into small pieces
  • 2 large eggs plus 1 egg yolk
  • 120ml | ½ cup double cream
  • 120ml | ½ cup whole milk
  • 1 tbsp finely chopped parsley (optional)
  • ½ tsp mustard powder
  • pinch freshly grated nutmeg
  •  
  • a little grated Parmesan (optional)
  • salt and freshly ground pepper
  • 1 tbsp vegetable oil to fry
