Japanese-Style (Kewpie) Mayo
Ingredients
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon plus 1 teaspoon (20ml) malt vinegar
  • 1 teaspoon (4g) Diamond Crystal Kosher salt; for table salt, use half as much by volume or the same weight
  • ½ teaspoon MSG powder (see note)
  • ½ teaspoon Japanese mustard powder
  • ⅛ teaspoon hon-dashi powder (see note)
  • ⅛ teaspoon garlic powder
  • 2 large egg yolks (30g)
  • 1 cup (240ml) vegetable oil
