I have been cooking over 50 years. I cook from scratch every day, so I am always looking for new recipes to try.

subheading: Eggplant:

2 Holland eggplants, or 1 Italian eggplant, sliced thinly

6 cloves garlic, chopped

4 tablespoons olive oil

1 teaspoon black pepper

Salt to taste

subheading: Mashed Potatoes:

2 Idaho potatoes, peeled and boiled until tender

1 tablespoon canola oil

¼ teaspoon cumin seeds

Scant ¼ cup chopped red onion

Scant ¼ cup chopped tomatoes

1 teaspoon chopped ginger

½ teaspoon turmeric

¼ teaspoon sliced Thai green chile

½ teaspoon chile powder

½ teaspoon chaat masala

1 tablespoon lemon juice

Salt to taste

subheading: Coconut Sauce:

2 ounces jaggery or ⅓ cup light brown sugar

½ cup coconut milk

¼ teaspoon red chile flakes

Scant ¼ cup chopped peanuts

½ teaspoon lemon juice
