No-Bake Blueberry Bliss Balls
Ingredients
  • 1.5 cups of fresh or dried blueberries
  • 1 cup of pitted medjool dates (seeds removed)
  • 1 cup of organic coconut flour (*don’t sub in any other flour for this measurement)
  • 1 tbsp of coconut oil
  • ½ cup unsweetened almond milk (or oat or cashew milk)
  • ¼ tsp of sea salt
  • ½ tsp pure vanilla extract or 1 ground vanilla bean
  • 3 to 4 tbsp of blueberry jam (I love homemade!)
  • ⅓ cup shredded coconut (to roll & coat them in at the end)
  •  
  • optional, but great add if not allergic to nuts: 1 to 2 tbsp of melted PB or almond butter for that PB & Jelly flavor!

  • Superfood them: You could add 1 tbsp of chia seeds, hemp hearts or collagen powder.
