Quick Bread and Butter Zucchini Pickles
Ingredients
  • 1 teaspoon celery seeds
  • 1 teaspoon whole yellow mustard seeds
  • 2 ½ pounds zucchini, sliced into ¼" inch thick rounds (approximately 7 or 8 medium-sized zucchini)
  • 1 large yellow onion, halved and thinly sliced
  • 1 ½ cups white wine vinegar
  • 1 ½ cups sugar
  • 1 teaspoon Kosher salt
  • ½ teaspoon ground turmeric
  • ½ teaspoon freshly ground pepper
  • ¼ cup tiny, stemless dill fronds, loosely packed
