Ingredients
  • 2 TBSP olive oil (or oil of your choice)
  • 20 oz. package of refrigerated,  precooked diced potatoes (I used Simply Potatoes brand)
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 2 cups diced fully cooked smoked ham (diced to approx the same size as the potatoes. I used Hatfield Ham Steaks)
  • salt and pepper
  • 1 TBSP finely chopped fresh rosemary (optional)
  • 12 large eggs
