Bake it once a week and you’ll have multiple breakfasts sitting in the fridge waiting for you. Top with more blueberries or your favorite E-friendly pancake toppings. This is simply the Trim Healthy Mama pancake recipe with added blueberries, but by baking it you attain a completely different result, more cake than pancake. This recipe is found in the "Sunrise Eats - Pancakes, Waffles, Crepes, and Donuts" section of our Trim Healthy Mama Cookbook, page 261. This is a family-serve recipe that makes 6 generous servings.
Ingredients
  • 2 cups old fashioned rolled oats
  • 2 cups 1% cottage cheese
  • 2 cups egg white (s)
  • 6 tsp THM Super Sweet Blend
  • 2 tsp vanilla extract
  • 4 tsp aluminum free baking powder
  • 2 cups blueberries (fresh or frozen - see recipe note below)
  • coconut oil spray
