  • 1 can coconut milk
  • 1 tablespoon coconut or olive oil
  • ½ a red onion, chopped
  • Two 500 gram packages of gnocchi, uncooked
  • 3 cups chopped fresh asparagus, about 1 bundle from the store
  • 1 cup fresh or frozen corn kernels or chopped baby corn
  • 1 cup chopped mushrooms
  • 1 cup edamame or green pea, frozen is fine
  • 2 cups fresh spinach
  • 2 cup sliced fresh tomatoes
  • 1 ½ cups vegetable broth
  • Salt and pepper to taste
