Oatmeal Chocolate Chip Bars
Ingredients
  • Wet ingredients:
  • One 15 oz can ( 270 g) chickpeas rinsed and drained
  • 1/2 cup ( 120 ml) plant-based milk I used coconut milk
  • 1 tbsp lime juice or lemon juice
  • 1/3 cup ( 80 g) nut butter or seed butter of choice I used cashew butter
  • 1 tsp vanilla extract
  • Dry ingredients:
  • 1/2 cup ( 100 g) Erythritol or sugar of choice
  • 2 cups ( 180 g) instant oats gluten-free if needed
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup dairy-free ( 120 g) chocolate chips more for the top
