Salsa Chicken
Yummy! Paleo friendly, easy, versatile.

Ingredients
  • 4 large Chicken Breasts, boneless, skinless
  • 2 cups Organic Salsa (I like the Kirkland brand from Costco)
  • 1 cup Celery, sliced or chopped
  • 1 cup Carrots, sliced, chopped or shredded
  • 1 cup Chicken Broth
Steps
  1. 1. Trim all day and icky bits from the chicken breasts and rinse.
  2. 2. Put half of the other ingredients in the bottom of a crockpot.
  3. 3. Lay chicken on top.
  4. 4. Put remaking ingredients on top of chicken.
  5. 5. Cook on high 4 to 6 hours, then keep on low or warm until ready to eat.
  6. Can be shredded, keeping just the amount of liquids as you like, depending on how you plan to use it.
  7. Great as is with grilled veggies, on a salad, or used in burritos, enchiladas, or taquitos.
