Ingredients
- 4 large Chicken Breasts, boneless, skinless
- 2 cups Organic Salsa (I like the Kirkland brand from Costco)
- 1 cup Celery, sliced or chopped
- 1 cup Carrots, sliced, chopped or shredded
- 1 cup Chicken Broth
Steps
- 1. Trim all day and icky bits from the chicken breasts and rinse.
- 2. Put half of the other ingredients in the bottom of a crockpot.
- 3. Lay chicken on top.
- 4. Put remaking ingredients on top of chicken.
- 5. Cook on high 4 to 6 hours, then keep on low or warm until ready to eat.
- Can be shredded, keeping just the amount of liquids as you like, depending on how you plan to use it.
- Great as is with grilled veggies, on a salad, or used in burritos, enchiladas, or taquitos.
