Greens in coconut curry
- 2-3 large handfuls of mixed cooking greens (kale, chard, spinach, nappa cabbage)
- 2 Tbl canned coconut milk (1 "ice cube")
- Curry powder to taste
- Salt to taste
- Put greens and coconut milk in a saucepan. Bring to a boil.
- Put on lid, turn off heat, and let sit 3-5 minutes until greens are wilted.
- Stir in a few shakes of curry powder and a pinch of salt.
- Serve hot or at room temp.
