Creamy Vegan Chocolate Ice Cteam
Ingredients
  • Vegan chocolate (of course) Icecream. The easy version. With or without a maker.
  • Soak ½ cup raw Cashews in 1 cup of water overnight. Drain
  • Place all ingredients in blender as follows -
  • The soaked Cashews with ¼ cup water. Blend. Then add
  • Mix 2 tabs strong cocoa powder (I use 100% one from Woolworths) with 2 tabs water
  • ½ cup sweetened soy milk. Or Almond milk. Or coconut milk
  • I like to mix the cocoa with the milk before adding to blender
  • ¼ cup brown rice syrup
  • ½ cup organic or unrefined sugar
  • ½ cup chickpea brine ( I am sure you could use other beans' brine)
  • ½ cup refined melted coconut oil
  • Make sure all ingredients are room temp. or the oil will seize.
  • Blend well.
  • Either churn it in maker (which is better in my opinion) or just pour into container and freeze.
  • Chocolate flavour is very creamy. And always successful. But then everything is better with Chocolate as we know:)
