Simple Curry Spiced Quinoa (Vegan, Gluten Free)
Ingredients
  • 1 cup uncooked white quinoa
  • 1 cup vegetable broth
  • 1 cup water
  • 2 teaspoons curry powder
  • Juice from 1 lemon (~ 2 tablespoons)
  • 1 tablespoon red wine vinegar
  • ½ cup chopped herbs (I used a combo of mint, cilantro, and parsley)
  • ½ cup raisins
  • 1 (15 oz.) can chickpeas, drained
  • ½ cup chopped unsalted, roasted almonds
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
