Sweet Potato with Eggs

Ingredients
  • 1 to 2 Tbsp coconut oil
  • ½ medium sweet potato, grated
  • 3 eggs
  • Pinch paprika and salt
Steps
  1. Heat oil in skillet over medium heat.
  2. Add grated sweet potato to skillet and toss with oil. Add paprika and salt. Cook for 5 minutes, stirring often.
  3. Once lightly browned, lower heat. Crack eggs over the sweet potatoes. Let the whites fill the spaces between the shredded potato.
  4. Cover with a lid and allow eggs to cook until whites are firm (or longer if you don’t like yolks runny.)
  5. Serve.
