Easy Mexican Rice
Ingredients
  • 3 tablespoons extra virgin olive oil
  • 1 cup finely chopped yellow or sweet onion (about 1 onion)
  • ½ cup finely chopped red bell pepper (about ½ bell pepper)
  • 2 cups long grain white rice (see note)
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • ¼ teaspoon ground cumin
  • 4 cups vegetable or chicken stock (see note)
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • ½ teaspoon Mexican oregano
  • Optional: chopped fresh cilantro to garnish
