Arancini Veneziani (Venetian Rice Fritters)
(sub pepperoni for prosciutto)
Ingredients
  • 6 cups chicken stock
  • 4 tbsp. unsalted butter
  • 3 cloves garlic, minced
  • 1 small yellow onion, minced
  • 1 1⁄3 cups arborio rice
  • 1⁄3 cup white wine
  • 4 oz. prosciutto, minced
  • 4 oz. fresh mozzarella, minced
  • 1 cup freshly grated Parmesan
  • 1⁄2 cup finely chopped parsley
  • 1⁄4 tsp. freshly grated nutmeg
  • Kosher salt and freshly ground black pepper, to taste
  • Canola oil, for frying
  • 1⁄2 cup flour
  • 4 eggs, lightly beaten
  • 1 1⁄2 cups plain bread crumbs
