  • 2 teaspoons kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 6 oz gruyere cheese
  • 3 oz fontina cheese
  • 2 oz parmesan cheese
  • 4 ½ lbs russet potatoes, about 6 to 7 medium potatoes
