Instant Pot Italian Cheese Stuffed Meatloaf

Ingredients
- 1 ½ pounds of extra lean ground beef (or substitute half pound for bulk sweet Italian sausage)
- 1 cup Italian seasoned breadcrumbs
- 1 cup matchstick carrots
- 1 cup tomato pasta sauce
- ½ cup water (for meatloaf)
- 2 large eggs
- ½ cup finely chopped onion (or puréed)
- 1 teaspoon minced garlic
- 1 teaspoon oregano
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ½ cups Kraft Italian 5 cheese (shredded)
- subheading: ALSO:
- 1 cup water (for bottom of instant pot)
- 1 cup warmed pasta sauce for topping
- 1 six cup bundt pan
- 1 "foil sling"
Steps
- Mix everything EXCEPT your "also" items and cheese in a mixing bowl.
- Spray bundt pan well with cooking spray.
- Fill pan about halfway with meatloaf mixture, then dig a deep well in the middle with a teaspoon. Fill well with cheese, then press remaining meatloaf mixture on top.
- Place trivet and 1 cup water in the Instant Pot, then lower the meatloaf onto the trivet using the foil sling. Close and seal the pot.
- Cook on MANUAL high pressure for 20 minutes.
- Quick release at completion of cook time.
- Tip meatloaf out of bundt pan onto cookie sheet and broil until top is lightly browned if desired.
- Top with warmed pasta sauce if desired.
- Enjoy!
