Instant Pot Italian Cheese Stuffed Meatloaf
Ingredients
  • 1 ½ pounds of extra lean ground beef (or substitute half pound for bulk sweet Italian sausage)
  •  
  • 1 cup Italian seasoned breadcrumbs
  •  
  • 1 cup matchstick carrots
  •  
  • 1 cup tomato pasta sauce
  •  
  • ½ cup water (for meatloaf)
  •  
  • 2 large eggs
  •  
  • ½ cup finely chopped onion (or puréed)
  •  
  • 1 teaspoon minced garlic
  •  
  • 1 teaspoon oregano
  •  
  • ½ teaspoon salt
  •  
  • ½ teaspoon black pepper
  •  
  • 1 ½ cups Kraft Italian 5 cheese (shredded)
  •

  • 1 cup water (for bottom of instant pot)
  •  
  • 1 cup warmed pasta sauce for topping
  •  
  • 1 six cup bundt pan
  •  
  • 1 "foil sling"
Steps
  1. Mix everything EXCEPT your "also" items and cheese in a mixing bowl.
  2. Spray bundt pan well with cooking spray.
  3. Fill pan about halfway with meatloaf mixture, then dig a deep well in the middle with a teaspoon. Fill well with cheese, then press remaining meatloaf mixture on top.
  4. Place trivet and 1 cup water in the Instant Pot, then lower the meatloaf onto the trivet using the foil sling.  Close and seal the pot.
  5. Cook on MANUAL high pressure for 20 minutes.
  6. Quick release at completion of cook time.
  7. Tip meatloaf out of bundt pan onto cookie sheet and broil until top is lightly browned if desired.
  8. Top with warmed pasta sauce if desired.
  9. Enjoy!
