Spice cake with fruit

Ingredients
  • ½ c dried fruit (cherries, cranberries, pineapple, crystallized ginger, etc.)
  • 1.5 c flour (ww is ok)
  • .5 c rolled oats
  • ½ tsp baking soda
  • 2 tsp vinegar
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • Opt orange zest or oil
  • ¼ c oil
  • 1 c Apple sauce
Steps
  1. Place the dried fruits in a bowl with just enough water to cover and microwave for 2 minutes.
  2. Allow fruits to rehydrate for about 30 mins.
  3. Mix the other ingredients in a separate bowl.
  4. Add the rehydrated fruit and ¼ c of the soaking water, which should be syrupy and sweet.
  5. Bake at 350. Cupcakes 17 mins; loaf 30 to 35 mins.
