Ingredients
  • 1 c. uncooked white rice
  • 2 tbsp. olive oil
  • ½ yellow onion
  • 3 cloves garlic, minced
  • 2 tsp. tomato/chicken bullion
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • ¼ tsp. paprika
  • ¼ tsp. black pepper
  • ½ (14.5oz) can diced fire roasted tomatoes with green chilies (Muir Glen brand is what I used)
  • ½ (8oz) can tomato sauce
  • 1 (14.5oz) can low sodium chicken broth
