Ingredients
  • 1 corn cob, husk and silk removed
  • ⅛ cup extra virgin olive oil
  • 2 garlic cloves, crushed

  • ⅛ cup lime juice, plus lime wedges to serve
  • 500gg cooked prawns, peeled, deveined (tails intact)
  • 1 baby cos lettuce, leaves separated
  • 125g cherry tomatoes, quartered
  • 1 avocado, sliced
  • 200g can black beans, drained, rinsed (optional)
  • ¼ red onion, thinly sliced
  • ¼ cup fresh coriander leaves
